“Umajun” means “Rich Umami Taste” with concentrated flavor of Gohyakumangoku rice polished to 60%.

The rice variety and the polishing rate is the same as the ones of Yamahai Jikomi Junmai, but compared to the classical Yamahai brewing method, this Umajun brewed by the modern brewing method gives a lighter and fresher impression with translucent fruitiness and bright acidity followed by a crisp and clean finish.

This is the sake designed to enhance the rich and complex flavor of food.
